Vegetarian lasagne with green lentils du Puy

12 lasagne sheets

350 g vegetables (courgettes, mushrooms, peppers)

1 clove of garlic

400 ml milk

3 tbsp. flour

60 g grated cheese

dried thyme

Preparation Method
- Bring the water to a boil in a pan. Then add the green lentils and cook for 20 minutes.
- Meanwhile, mince the vegetables and a clove of garlic.
- Drain the green lentils.
- In a frying pan, sauté the vegetables with a dash of olive oil.
- Then add the tomato sauce, thyme, salt, and pepper.
- Preheat the oven to 180°C.
- Prepare the béchamel. Remember it is: butter, flour, and milk.
- Add the thyme to your bechamel and mix everything together.
- Finally, shape the lasagne by layering the leaves, vegetables, lentils, and bechamel.
- Add the grated cheese on top.
- Remove from the oven after 30-40 minutes of cooking.
