Tagliolini with Squid and Pumpkin
Pasta with squid is very popular in Italy, especially in the central and southern coastal regions.
Ingredients

300gr Pumpkin (already cleaned and cut into cubes)

1/2 red onion
-
4 squid
-
Chili (chopped)
-
Parsley (chopped)

1 clove of garlic
Preparation Method
- In a pan, sauté the oil and onion. Add the sliced pumpkin, salt, and pepper, cover with the lid and cook over low heat for about 15 minutes.
- Clean the squid and cut them into rings. Cook them in a frying pan with olive oil, garlic, a pinch of salt, a pinch of pepper, and a drop of white wine for 15 minutes.
- Add the squid to the pumpkin sauce and continue to cook for another 10 minutes.
- Finely chop the parsley and add it to the sauce.
- Cook the tagliolini in lightly salted boiling water.
- Drain the tagliolini, sauté in a pan with the squid and pumpkin sauce and serve.
