Tagliatelle with Truffles
With an ingredient as luxurious as white truffle, it’s important to keep things simple.

1 fresh medium white truffle, peeled and sliced, or sliced truffles
Preparation Method
- Bring a large pot of salted water to a boil.
- In a small skillet, melt the butter. Cook over moderate heat until light brown and butter smell nutty, about 6 minutes. Put the butter in a bowl.
- Cook the pasta in boiling water until al dente.
- Drain the pasta, reserving 1/2 cup of the cooking water. Return the dough to the pan. Add the reserved water and golden butter and mix with 2 forks.
- Add the cheese and stir until it starts to melt; Season with salt and pepper. Transfer the dough to warmed bowls, scrape the truffle over the top, then serve.
