Sweet Potato Stuffed with Tuna
A healthy and tasty meal.
Ingredients

2 orange sweet potatoes

2 stalks of fresh rosemary

Salt to taste

Pepper to taste

800 g water

2 eggs
-
1/2 onion

1 ripe tomato
-
1 clove garlic

50 g kale
Preparation Method
- Cut each potato lengthways and season with 1 drizzle of olive oil, the rosemary leaves, garlic powder, salt and pepper.
- Place the boiled eggs and potatoes in a steamer tray.
- Remove the tray and basket and drain the water. Peel the eggs and set aside.
- Chop the onion, seeded tomato, and garlic clove and set aside.
- Then add the olive oil and sauté with the previous preparation.
- Add the tomato pulp, the well-drained tuna, 1 coarsely chopped egg, the julienned cabbage, salt and pepper and cook for 3 minutes.
- Cut the potatoes in half and fill them with the tuna. Sprinkle with the grated egg and seeds and serve.
