Stracotto with Mediterranean Sauce, Potatoes and Peas
The stracotto is an Italian classic – the meat is slow cooked with broth and seasonings that vary depending on the region of Italy or the cook.
Ingredients

800g Veal (cubes)

3 potatoes

200g Peas

1 Clove Garlic

1 Onion (chopped)

Rosemary

Preparation Method
- Finely chop an onion and sauté the garlic, rosemary and bay leaf.
- Blanche the pieces of veal and deglaze with the red wine. As soon as the wine has evaporated, add the Mediterranean Sauce and cook over a very low heat for at least 2 hours.
- When there are 30 minutes left to the end of cooking time, add the diced potatoes and the peas. Finish cooking and serve.
