Stracotto with Mediterranean Sauce, Potatoes and Peas

The stracotto is an Italian classic – the meat is slow cooked with broth and seasonings that vary depending on the region of Italy or the cook.

Preparation Method

  1. Finely chop an onion and sauté the garlic, rosemary and bay leaf.
  2. Blanche the pieces of veal and deglaze with the red wine. As soon as the wine has evaporated, add the Mediterranean Sauce and cook over a very low heat for at least 2 hours.
  3. When there are 30 minutes left to the end of cooking time, add the diced potatoes and the peas. Finish cooking and serve.
