Spanish-style gazpacho
It is a cold vegetable-based soup, especially tomato, cucumber and paprika, very popular in southern Portugal, southern Spain and Mexico.
Ingredients

1 Red Pepper

½ Green pepper

½ Cucumber

½ Onion

4 Cloves of Garlic

4 Boiled Eggs

Salt
-
Pepper

Preparation Method
- In a food processor, blend the tomato juice with the seedless peppers, the peeled cucumber, the onion, and the garlic cloves.
- Season with salt and pepper, add the vinegar and a dash of olive oil, and blend again until smooth.
- Finally, add the ice cubes and crush them again.
- Pour the purée into a bowl or small individual bowls and sprinkle with boiled egg cubes when serving.
