Soba Noodles with Scallops
Soba is the Japanese word for buckwheat. Thin spaghetti made from buckwheat can be served cold with dipping sauce, or stir-fried with meat and vegetables.
Ingredients

2 tbsp white miso paste

2 cm ginger

1 clove garlic

6 arranged scallops

2-3 stalks fresh onion

1 Hot chilli pepper

Sesame seeds with wasabi
Preparation Method
- Cook the noodles in boiling water until al dente.
- Meanwhile, using a hand blender mix 4 tbsp miso paste, 3 tbsp olive oil, 4 tbsp rice vinegar, 6 tbsp sake, 2cm sliced ginger and 1 clove garlic.
- Pour this marinade over the scallops.
- While they are taking flavour, add 1 drizzle of olive oil to a non-stick pan and place on the heat.
- When hot, pat the scallops dry with kitchen paper towels, sear for 1 minute on each side and set aside.
- Add the marinade to the frying pan, as well as the cooked and well-drained pasta.
- Place on a plate, place the scallops on top, sprinkle with sliced chilli, chopped chives and wasabi sesame seeds.
