Smoked Salmon Thousand-Leaf and Avocado Cream

Ingredients

200 g of ripe avocado

1 onion

1 clove of garlic

2 very ripe tomatoes

½ lime (juice)

arugula

1 lemon
Preparation Method
- Mix avocado pulp with the lime juice, the tomatoes, cleaned of skin and seeds and cut into cubes, the whole garlic and the chopped onion.
- Season with a little Tabasco, salt, pepper and a drizzle of olive oil. Crush everything.
- On a platter, place some arugula leaves.
- Then, with the help of a ring, make the mille-feuille: first add a layer of the avocado cream, then the smoked salmon and finish with another layer of the cream.
- Garnish with rosettes made from salmon and a quarter of a lemon and serve.
