Smoked Salmon Thousand-Leaf and Avocado Cream

  1. Mix avocado pulp with the lime juice, the tomatoes, cleaned of skin and seeds and cut into cubes, the whole garlic and the chopped onion.
  2. Season with a little Tabasco, salt, pepper and a drizzle of olive oil. Crush everything.
  3. On a platter, place some arugula leaves.
  4. Then, with the help of a ring, make the mille-feuille: first add a layer of the avocado cream, then the smoked salmon and finish with another layer of the cream.
  5. Garnish with rosettes made from salmon and a quarter of a lemon and serve.
