Smoked Salmon Salad
This smoked salmon salad is a delicious suggestion to try on the hottest summer days. It can be served as a starter or as a main dish.
Ingredients

1 bunch of green asparagus

2 tablespoons of chopped parsley

1 lemon (juice and zest)

1 boiled beet
-
150 g of arugula
-
pickled red onion q.s.
Preparation Method
- Blanch the asparagus for about 5 minutes in boiling salted water.
- Drain them, cut them into small pieces and sauté them in a frying pan with a drizzle of olive oil for about 3 minutes. Reserve.
- Place the salmon cut into pieces in a bowl.
- Season with parsley, lemon zest and juice and mix well.
- Let marinate for about 10 minutes.
- Place the diced cooked beetroot, the arugula, a drizzle of olive oil and a drizzle of balsamic vinegar in a large bowl. Mix well.
- Add the asparagus, marinated salmon, pickled red onion and toss again.
- Serve immediately.
