Scallops with crispy artichokes and red pesto

250 g Sliced Artichokes

Oil for frying

800 gr scallops

Flour to taste
Preparation Method
- Fry the sliced artichokes and the previously floured artichoke hearts in plenty of hot oil.
- Salt and brown the scallops on both sides in a pan over medium heat. Drizzle with the white wine and allow it to evaporate.
- Remove the scallops from the pan and add the red pesto.
- Serve the scallops and fried artichokes drizzled with red pesto.
