Rice for Sushi
The perfect way to make sushi rice is the basis for creating any sushi dish.

Preparation Method
- Wash 250g of sushi rice in cold water, stirring in circles. Drain and repeat 3-4 times until the water is clear.
- Transfer the drained rice to a heavy-bottomed pan and add 300ml of cold water. Leave to soak for 15-30 minutes.
- Put the pan on the fire and cook for 10 minutes with the lid on.
- Turn off the heat and let it rest for 10 minutes with the lid still closed.
Make seasonings:
- Mix 3 tablespoons of Japanese rice vinegar, 2 tablespoons of sugar, and 1 teaspoon of salt in a bowl. For a lighter flavor, reduce the sugar to 1 ½ tbsp and the salt to ¾ tsp.
Season the rice:
- Transfer the cooked rice to a bowl and add the seasonings.
- Gently fold and cut the rice with a wooden spatula. To avoid breaking up the beans, do not overmix or use a stirring motion.
- Cool the rice to body temperature and it’s ready to make sushi.
