Red Wine Risotto

Ingredients

50 g chopped onion

30 g celery (stalk)

750 ml water

25 g of grated parmesan cheese

2 tablespoonful of chopped chives
Preparation Method
- Heat the olive oil in a pan, add the peeled and chopped onion, and the celery stalk cut into thin strips, and cook over moderate heat until the onion starts to brown.
- Add the rice and fry for 1 minute, stirring constantly. Add the red wine and cook, stirring, until the rice has absorbed the wine.
- Meanwhile, dilute the chosen stock in hot water, add the salt, and add to the rice little by little, stirring constantly. The rice takes about 25 minutes to cook and should become creamy.
- Add the parmesan cheese and the chives, mix well, and serve immediately as an accompaniment to roast meat or duck breast.
