Red lentil velouté with coconut milk and ginger
Easy to prepare, red lentils suit all tastes: in soups, salads or even as a side dish.
Ingredients

1/2 onion

1 clove of garlic

15 g fresh ginger (quantity to be adapted according to your taste sensitivity)

75cl water
Preparation Method
- Chop the onion and garlic. Wash the lentils in clean water
- Put the olive oil then the onion and garlic in a pan
- Add the ginger and mix. Add the lentils
- Mix for 30 seconds and add 75 cl of water
- Bring to the boil and cook for 15 minutes Whisk the mixture until you get a smooth soup.
- Leave on low heat and add the coconut milk, stir for 5 minutes. Serve.
