Red Fruits Cheesecake
This red berry cheesecake is a great dessert for party days and will be the main focus of attention on your table. The good and bad news is that everyone will probably want to make it again.
Ingredients
For the base:

425 g Butter Cookies

100 g Butter
For the filling:

300 g Greek yoghurt
-
200 g mascarpone cheese
-
10 gelatine sheets
For the topping
-
300 g frozen red berries
-
3 sheets of gelatine
-
1 cinnamon stick
Preparation Method
- Crush the biscuits and the margarine all together until you obtain a consistent dough. Line the bottom of a baking tin with the biscuits. Put aside.
- Prepare the filling: soak the gelatine leaves in cold water. Place in a bowl with a whisk add the cream and the yoghurt and mix well.
- Add the cheese, honey and vanilla and beat the mixture for another 30 seconds. Drain the gelatine sheets and melt them in the microwave, without boiling. Add to the previous mixture and pour into the mould, on top of the biscuit base and chill for 1 hour.
- Prepare the top: soak the gelatine leaves in cold water. Place the red fruits in a pan with the lemon juice, cinnamon stick and honey. Heat for 10 minutes. Drain the gelatine leaves and melt them in the microwave, without boiling. Remove the cinnamon stick from the previous mixture, place it in the food processor for grinding and add the gelatine through the opening in the lid, increasing the speed. Pour over the solidified filling and place in the fridge for 2 hours.
