Quinoa Salad with Chicken and Tomato
A simple and healthy recipe perfect for any day of the week!
Ingredients

300 g of quinoa

1/2 cucumber
-
2 tomatoes
-
2 chicken breasts
-
5 mint leaves
-
1 red onion
-
some pumpkin seeds
Preparation Method
- Cook the quinoa for 15 minutes in a pot of boiling water. Then quickly run it under cold water and drain.
- Meanwhile, wash the tomatoes, remove the seeds and chop them.
- Cut the sun-dried tomatoes into pieces. Wash the cucumber and cut it into thin slices.
- In a skillet over medium heat, add a tablespoon of oil and brown the chicken chops.
- Then cut the chicken breasts into strips.
- Peel and chop the onion (1/2 may be enough). Wash, dry and finely chop the mint.
- Place the quinoa in a salad bowl. Drizzle with lemon juice and a spoon of olive oil and three spoons of pumpkin seed oil.
- Add the fresh and sun-dried tomatoes, cucumber slices, mint and red onion. Mix well and serve.
