Pumpkin Cake with Chocolate Chips
Nothing better than a homemade cake full of flavour.
Ingredients

120 grams of whole wheat flour, divided

1 teaspoon baking soda

1/2 teaspoon salt

2 eggs

1 tablespoon milk

215g pumpkin puree
Preparation Method
- Grease a 900 g loaf tin with oil and stir in 1 tablespoon of whole wheat flour to coat the edges. Place a small piece of baking paper on the bottom of the oven and turn it on high power.
- In a large bowl, mix together the flours, bicarbonate and salt. Add the olive oil, maple syrup, eggs, milk and vanilla extract. Mix until the ingredients are well beaten and the mixture is lump-free (if using butter and sugar, mix the ingredients in a separate bowl before mixing the eggs, milk and vanilla). Fold in pumpkin puree and chocolate chips.
- Spoon all the mixture into the loaf tin and set the oven for 2 ½ hours on high. Check baking by inserting a toothpick into the middle of the cake. If it comes out clean, the cake is done.
