Pork Chops with Juniper

  1. Place the chops on a large baking tray.
  2. In a mortar, crush the coriander seeds and peppercorns, together with the juniper berries. Add about 1 tablespoon of chopped thyme, salt, butter, and a pinch of paprika.
  3. Mix everything very well and pour over the chops. Drizzle with the lemon juice and mix everything together. Wash the potatoes, pears, and endives under running water and drain well.
  4. Cut the potatoes into slices about 0.5 cm thick, the pears into segments, and the endives into quarters. Add everything to the cutlets and mix well. Bake in a moderate oven (200 °C) for about 1 hour.
