Preparation Method
- In a blender, mix the hummus, pickled cucumbers, salt, and pepper. Blend until smooth. If the mixture seems too stiff, you can add the juice of the pickles, a tablespoon at a time.
- Serve in a wide, shallow bowl and garnish the top with a drizzle of good olive oil and slices of pickled cucumber.
