Pesto Risotto
Delicious and easy to make, this pesto risotto will surprise you.
Ingredients

1 small onion

1 tablespoon of butter

50g grated parmesan cheese
Preparation Method
- Start sautéing the onion with the olive oil and when it is very soft, add the rice;
- Then add the rice and let it fry for a few minutes (on low heat so it doesn’t burn);
- Add the white wine and when it starts to evaporate, start adding the vegetable stock little by little;
- Soon after, stirring constantly, keep adding the broth as your risotto dries out and while the rice is not soft.
- Then the rice is soft, add the cheese and the butter, remove from heat and wait 5 minutes before mixing the pesto;
- Finally, adjust the salt and pepper to taste.
