Penne with dried tomatoes, ricotta and rocket
Try this penne with dried tomatoes, ricotta and rocket, an elegant dish, easy to make and simply delicious.

200 pcs chopped red onion

3 chopped garlic cloves

1 teaspoon sweet pepper

250 g ricotta

100 g rocket

basil

Preparation Method
- In a frying pan, pour some of the oil from the dried tomatoes. Add the chopped onion and garlic and cook for about 3 minutes. Add the sweet pepper and mix.
- Add the chopped dried tomato and stir. Let it cook until the tomato is crispy.
- Meanwhile, cook the pasta according to the package directions with half the salt.
- Also prepare the ricotta, mixing it with the lemon zest and juice.
- Drain the pasta and add it to the pan. Season with the remaining salt and mix well.
- Add the rocket and basil. Serve in bowls with the ricotta.
- Finish with pepper.
