Moroccan Mint Tea
At first glance it seems like an overly complex recipe for a simple tea. But don’t be fooled: it is easy to prepare and the result is a fragrant drink with a golden hue and a complex and surprising flavour.

10 sprigs of fresh mint

1 litre of water
Preparation Method
- Bring a kettle with the water to a high heat. When the first bubbles start to rise, turn off the heat.
- Place the green tea in a kettle (or teapot that can be boiled) and pour 1 cup of the hot water onto the dried leaves. Allow to infuse for 30 seconds, strain into a jug (or bowl), and reserve this first infusion – it contains the purest, most concentrated flavor of green tea.
- Keep the green tea leaves in the kettle and drizzle with another 1 cup of hot water. Let it infuse again for 30 seconds, and strain and discard this second infusion – this step is essential to decrease the bitterness of the tea.
- Return the first infusion to the kettle with the green tea leaves. Add the remaining hot water (2 cups), add the mint sprigs and add the sugar.
- Bring to medium heat and cook for about 5 minutes, until it boils and a foam forms on the surface – the foam indicates that the sugar has completely dissolved. Tea boiled with sugar gets a caramelized touch in flavor.
- Pour the hot tea into small glasses, top with fresh mint leaves, and serve immediately.
