Mexican Emperors Red Rice
This rice originally reserved for the Chinese emperor is a brown rice. It has a subtle, delicate flavour and is very rich in fibre, vitamins and minerals. It can be cooked in a salad, or as an accompaniment to meat, fish or vegetables.
Ingredients

1 red onion

1 tomato

150g corn

salt
-
pepper
Preparation Method
- In a frying pan, add a little olive oil and sauté the onion until golden. Add the rice and stir.
- Add the vegetable stock. Cover and cook over a low heat for about 20 minutes, stirring regularly, or until the rice is cooked and the liquids are well absorbed.
- Then add the red beans, corn and chopped fresh tomato. Let it simmer for a few minutes. Before serving add the crushed peanuts.
