Marinated Quail with Chestnuts

  1. Open the quails, clean them and season them with salt, pepper, a sliced garlic clove, and white wine. Drain them, reserving the marinade, and brown them well on both sides in a frying pan with olive oil. Remove and set aside.
  2. In the same frying pan, add the sliced onion, the carrot, and the remaining chopped garlic cloves. Add the vinegar and season with salt.
  3. Then add the defrosted chestnuts and the meat marinade and cook until the flavors come together.
  4. Arrange the quails on top, cook for a few minutes more, remove from the heat, sprinkle with parsley, and serve.
