Marinated Quail with Chestnuts

8 quails

200 g carrots

1 large onion

3 cloves of garlic

0.5 dl vinegar

Chopped parsley
Preparation Method
- Open the quails, clean them and season them with salt, pepper, a sliced garlic clove, and white wine. Drain them, reserving the marinade, and brown them well on both sides in a frying pan with olive oil. Remove and set aside.
- In the same frying pan, add the sliced onion, the carrot, and the remaining chopped garlic cloves. Add the vinegar and season with salt.
- Then add the defrosted chestnuts and the meat marinade and cook until the flavors come together.
- Arrange the quails on top, cook for a few minutes more, remove from the heat, sprinkle with parsley, and serve.
