Lentils, Sweet Potato and Cabbage Stew
Make stewed lentils with vegetables perfect for a healthy main meal.
Ingredients

1 large sweet potato

1/2 heart cabbage

200 g mushrooms

1/4 red pepper

1 courgette
-
1/2 red onion
-
2 cloves garlic
-
1 teaspoon paprika
-
1 teaspoon cumin
-
1 teaspoon ginger powder
Preparation Method
- Start by cooking the lentils in salted water for about 20 minutes or until cooked. Set aside.
- Cut the courgette, pepper, and unpeeled sweet potato into smaller cubes. Cut the cabbage into julienne and the mushrooms into slices. Set aside.
- Heat the olive oil with the chopped onion and garlic. Let it sauté a little and add the spices. Mix well.
- Add the tomato pulp and season with salt and pepper. Cook for a further 5 minutes. Then add the vegetables and a cup of water and let the vegetables simmer.
- When the vegetables are cooked, add the lentils and rectify the seasoning. Serve immediately.
