Lemon Curd Biscuits
An extremely addictive biscuit.
Ingredients

150 g butter

350 g flour

1 pinch of salt

90 g brown sugar

1 tablespoon lemon zest

2 egg yolks
Preparation Method
- Start by mixing the flour with the salt and add the butter in pieces, kneading with your fingertips until you get a kind of bran.
- Add the sugar, egg yolks and lemon juice and zest, mixing well until a smooth dough forms.
- Shape the dough into a ball, cover with cling film and refrigerate for 30 minutes.
- After this time, shape into walnut-sized balls, make a dimple in the center and flatten them slightly. Place the dough balls on a baking tray lined with greaseproof paper and fill each dimple with a little lemon curd.
- Bake in the oven, preheated to 180ºC, for around 8-10 minutes or until lightly golden.
- Remove the biscuits from the oven and add a little more lemon curd if necessary.
