Lemon Curd Biscuits

An extremely addictive biscuit.

Preparation Method

  1. Start by mixing the flour with the salt and add the butter in pieces, kneading with your fingertips until you get a kind of bran.
  2. Add the sugar, egg yolks and lemon juice and zest, mixing well until a smooth dough forms.
  3. Shape the dough into a ball, cover with cling film and refrigerate for 30 minutes.
  4. After this time, shape into walnut-sized balls, make a dimple in the center and flatten them slightly. Place the dough balls on a baking tray lined with greaseproof paper and fill each dimple with a little lemon curd.
  5. Bake in the oven, preheated to 180ºC, for around 8-10 minutes or until lightly golden.
  6. Remove the biscuits from the oven and add a little more lemon curd if necessary.
