Homus with green lentils from Le Puy
This recipe is best when made with the French green lentil du puy – which is small, has a delicate flavour and smooth texture.

1 clove garlic

½ tsp. cumin powder

Preparation Method
- Peel the garlic. Place the lentils in the bowl of a food processor.
- Add the minced garlic, lemon juice, tahine, a pinch of salt, olive oil and cumin.
- Blend to obtain a smooth paste.
