Grilled Asparagus Salad with Ham and Ricotta
A grilled asparagus salad with ham and ricotta is a real summer sensation.
Ingredients

400g Green Asparagus

6 Slices of Ham

150g Ricotta

1 Handful of Rocket Arugula
Preparation Method
- Peel the asparagus and cut off the woody ends if necessary.
- Place them in a hot frying pan, cooking for two minutes on each side with a drizzle of olive oil.
- Season with sea salt and squeeze a little lemon juice over the top.
- Arrange the asparagus on a shallow platter over a bed of rockets and cut the Ham slices into strips so that they rest on top of the salad.
- Finish the dish by grating the Ricotta on top, sprinkling with a little black pepper and a splash of balsamic vinegar.
