Galette of Apple with Salted Caramel
A simple dessert perfect for surprising friends and family.
Ingredients
Salted caramel

200g caramel candies

50g butter

1/2 teaspoon salt or to taste
Pastry

190g flour

115g iced butter

60ml ice water

Salt

1 egg for sprinkling (not in the batter)
Filling

3 large apples

12g flour
Preparation Method
For the Caramel:
- In a thick-bottomed saucepan melt the sweets until liquid. Remove from the heat and add the butter, stirring constantly. Add the cream, mix well with a fouet and add the salt. Store in a covered jar for up to 15 days in the fridge, heat to leave fluid.
Prepare the dough:
- In a bowl mix the flour, sugar, and salt.
- Add the chilled butter in small pieces and mix with your fingertips until it forms a moist fluffy mixture of smaller and larger pieces of butter. Add the iced water a little at a time until the dough is still crumbly. Put together in a disk, wrap in plastic wrap, and leave in the fridge for at least 1 hour.
Prepare the filling:
- Peel, core, and thinly slice the apples. In a large bowl mix the apples, sugar, flour, and lemon. Leave to rest for 15 minutes.
- Open the dough disk into a round shape and put it in a round or pizza pan lined with baking paper. Arrange the apples (without the sauce that formed) in the center of the dough and fold the edges over the apples. Spread a little of the caramel (optional), brush a beaten egg on the edges and sprinkle sugar. Leave in the fridge while you heat the oven to 190 degrees for 20 minutes.
- Bake for about 45 minutes, until golden and the fruit is soft. Leave to cool for 20 minutes, transfer to a plate and serve with the remaining caramel.
