French peas with chorizo
Take advantage of the stiffer or wilting leaves of lettuce to make these French-style peas with bacon. A tasty, cosy and waste-free dish.
Ingredients

100 g onion

lettuce

400 g frozen peas

pepper mixture

fresh mint

500 ml water
Preparation Method
- Brown the bacon in a pan with olive oil. Add the chopped onion and, when translucent, add the sliced chorizo, the lettuce leaves, well-washed and cut into wide strips, and the frozen peas. Mix well, cover, and leave to sweat over moderate heat for 10 minutes.
- Season with a teaspoon of salt and freshly ground pepper. Add the dried tomatoes cut into strips and a mint stem, drizzle with the white wine, and cook over low heat for a further 20 minutes.
- Sprinkle with the sugar and simmer gently for another 10 minutes.
- In another pan, bring the water to a boil. When it boils, season with the remaining salt and add the rice. Stir, cover, and cook for about 12 minutes.
- When serving, remove the mint stem and sprinkle with fresh mint leaves. Serve with rice.
