Dip of Butter Beans
Butter or white bean dip is delicious, and light and ready in twenty minutes, accompany this dip with vegetables and linguettes.
Ingredients

2 tins of cooked white beans

1 clove of garlic

¼ cup coriander leaves

4 stalks of chives
Preparation Method
- Drain well the water from the can of white beans. Set aside.
- Using the side of a knife, mash the garlic clove and discard the peel. Wash, dry, and finely chop the coriander and chives.
- In a large frying pan, add the olive oil, and garlic, and heat over low heat. When fragrant, add the beans and sauté for 1 minute.
- Add the coriander, the chives, the chili, the zest, and the lemon juice. Season with salt and pepper to taste and sauté for a further 2 minutes.
- Turn off the heat, discard the garlic clove and mash the white beans while still warm with a fork until they form a paste.
- Transfer to a bowl and leave to cool. Drizzle with a little olive oil and serve.
