Cold Melon Soup with Sherry Vinegar

Melon and ham don’t necessarily have to be served in the traditional way. Dare to innovate and try this delicious cold melon soup.

Ingredients

  • 1 peeled melon
  • 1/3 green pepper
  • 1/4 red onion
  • 140 gr bread
  • 100 grams of cured ham cubes
  • 1 bunch of parsley
  • 50 grams of peanuts
  • 100 grams of pickled onions
  • 150 ml extra virgin olive oil

Preparation Method

  1. Put in the blender glass 1 melon, 1/3 roasted pepper, 1/4 onion, 150 gr. bread, salt, 200 ml. olive oil, 75 ml. Sherry vinegar.
  2. Mix until homogeneous and keep cold.
  3. In a bowl put 100 gr. diced ham, 1 bunch of chopped parsley, 50 gr. chopped peanuts, 100 gr. pickled onion, 150 ml. extra virgin olive oil and mix well.
