Codfish Pie

Ingredients

1 chopped onion

1 bay leaf

3 cloves garlic, chopped

500g soaked and shredded codfish

500g boiled potato

100g diced butter

Salt, to taste

Pepper, to taste

150ml vegetable soya drink

Nutmeg, to taste
Preparation Method
- Put a drizzle of olive oil in a frying pan and add 1 chopped onion, 1 bay leaf, and 3 chopped garlic cloves. Leave to sauté for a few moments.
- Add the soaked and shredded cod, season with 1 pinch of salt, and cook for 5 minutes. Remove from the heat and set aside.
- Place the previously cooked potato in a saucepan and crush well.
- Add the diced butter, season with salt and pepper and gradually add the vegetable soya drink. Mix well and add the nutmeg.
- Arrange the sautéed cod on a serving dish and cover with the mashed potato on top. Sprinkle grated mozzarella cheese on top and bake at 180ºC for 10 to 15 minutes.
- Serve the codfish pie and garnish with chopped parsley.
