Codfish Pie

Enjoy the tasty codfish pie, a traditional recipe that combines the succulence of codfish with creamy mashed potatoes. An irresistible option of Portuguese cuisine that will delight your palate.

Ingredients

  • 1 chopped onion
  • 1 bay leaf
  • 3 cloves garlic, chopped
  • 500g soaked and shredded codfish
  • 500g boiled potato
  • 100g diced butter
  • Salt, to taste
  • Pepper, to taste
  • 150ml vegetable soya drink
  • Nutmeg, to taste

Preparation Method

  1. Put a drizzle of olive oil in a frying pan and add 1 chopped onion, 1 bay leaf, and 3 chopped garlic cloves. Leave to sauté for a few moments.
  2. Add the soaked and shredded cod, season with 1 pinch of salt, and cook for 5 minutes. Remove from the heat and set aside.
  3. Place the previously cooked potato in a saucepan and crush well.
  4. Add the diced butter, season with salt and pepper and gradually add the vegetable soya drink. Mix well and add the nutmeg.
  5. Arrange the sautéed cod on a serving dish and cover with the mashed potato on top. Sprinkle grated mozzarella cheese on top and bake at 180ºC for 10 to 15 minutes.
  6. Serve the codfish pie and garnish with chopped parsley.
