Cod with Bread and Dried Fruits

Ingredients

500 g of cooked cod

400 g of spinach

300 g of chopped bread crumbs

100 g of raisins

2 onions

3 cloves of garlic

1 bunch of parsley
Preparation Method
- Clean the skin and bones of the cod, flake it and set it aside.
- Chop the garlic cloves and 1 onion and brown them in half the oil. Add the spinach and the remaining onion cut into thin half-moons, stir and cook until soft. Then add the cod and mix. Adjust the salt, season with pepper, and remove from the heat.
- Turn on the oven to 180 degrees. Mix the bread with the almonds, walnuts, and raisins in a bowl. Chop the parsley and toss in this mixture. Reserve.
- Spread the cod and spinach mixture on the bottom of an oven dish. Spread the bread mixture on top and drizzle with the remaining oil. Bake in the oven for 15 minutes or until golden. Serve it hot.
