Chocolate mousse with mint and pepper

Fall for the temptation of this chocolate mousse with mint and pepper, full of personality and low in sugar, prepared with 70% cocoa dark chocolate. All the flavour without added sugars.

  1. In a saucepan, heat the milk in a bain-marie with two or three mint leaves. To give the mint more flavour, rub the leaves lightly against the palm of your hand. Let the milk heat up very well.
  2. Break the chocolate into small pieces.
  3. Remove the mint leaves and add the milk chocolate, reserving about a tablespoon for decoration.
  4. Stir the mixture so that the chocolate melts completely. Separate the yolks from the whites. Set the egg whites aside and add the yolks, one by one, to the chocolate, mixing very well.
  5. Beat the egg whites until stiff and fold them gently into the melted chocolate.
  6. Spread into four bowls, sprinkle with the reserved chocolate finely chopped and place in the refrigerator to cool well.
  7. When serving sprinkle the mousse with freshly ground pepper and decorate with fresh mint leaves.
