Chickpea Hummus with Honey Mustard
A recipe for chickpeas with honey mustard, as a great option for a very healthy snack.
Ingredients

300 g dried chickpeas

1 onion

1 carrot
-
½ leek
-
1 tablespoon ground cumin powder

¼ bunch of coriander leaves
Preparation Method
- The day before, soak the chickpeas in a large amount of cold water.
- The next day, place the drained chickpeas, the peeled onion, the washed and peeled carrot, the broken and washed leek in a pan.
- Bring to a simmer. After 45 minutes, season with coarse salt and cook for another 15 minutes.
- The chickpeas must be well cooked. Otherwise, extend the cooking time.
- At the end of the cooking time, there should be 600 g of chickpeas. Drain and reserve 70 g of chickpeas for garnish.
- Mix the rest with the Tahini, 100 g of honey mustard, cream, olive oil and cumin powder.
- You can mix more or less finely to your liking. Adjust the seasoning.
- Place in a spiral presentation dish and do the same with the remaining 40 g of honey mustard.
- Garnish with chickpeas and coriander leaves.
