Cheese Rondelli with Truffles
Cheese rondelli is a dough filled with cheese.
Ingredients

500g Cheese Rondelli

100g grated parmesan

1 small onion grated

2 spoons of olive oil

Pepper

Preparation Method
- Heat the oil and add the onion and cook over medium heat.
- When the onion begins to wilt, add half the truffles and stir continuously for 3 minutes (stir gently)
- Dissolve the vegetable broth in approximately 100 ml of hot water
- Add the sparkling wine and the vegetable broth
- Leave to cook and when 50% of the liquid has evaporated, add the cream.
- Adjust the salt and cook for another 3 minutes, turn off the heat and store the sauce.
- In a refractory, line the base with the prepared sauce and arrange the rondellis over it.
- Finish with the sauce covering the entire rondelli, add the grated parmesan, black pepper (to taste), and the truffles to finish.
- Heat in oven at 200° for approximately 20 minutes
