Bulgur Tabbouleh
This version of tabbouleh made with bulgur is perfect for a light lunch.
Ingredients

½ bunch parsley

¼ bunch coriander

¼ bunch mint

3 spring onions

3 tomatoes
Preparation Method
- Cook the bulgur for 10 minutes in boiling salted water, drain, and leave to cool.
- Chop the herbs and onions, finely chop the tomatoes.
- Season the tabbouleh with lemon juice, olive oil, salt, and pepper.
- You can add a few pomegranate seeds for freshness.
