Beetroot and Pistachio Goat Cheese Salad

Sweet and earthy beetroot salad with crunchy pistachios and salty goat cheese.

Preparation Method

  1. Preheat the oven to 200° C.
  2. Wrap beets in foil and bake in the middle of the oven until tender, 1 to 1 1/2 hours. Unwrap beets.
  3. While beets are cooling, mix the shallot, lemon juice, salt, and pepper in a small bowl and add the oil, stirring constantly.
  4. When the beets are cool enough to handle, discard the skin and dice the beets.
  5. Add 2 1/2 tablespoons of the dressing to the bowl and mix to coat.
  6. Insert the diced goat cheese and pistachios.

Chef Tip:

If you want to add fruit to the salad, introduce mandarin orange wedges for a touch of sweetness.
