Beetroot and Pistachio Goat Cheese Salad
Sweet and earthy beetroot salad with crunchy pistachios and salty goat cheese.

113 g goat's cheese

2 large beetroots

2 shallots (chopped)

Preparation Method
- Preheat the oven to 200° C.
- Wrap beets in foil and bake in the middle of the oven until tender, 1 to 1 1/2 hours. Unwrap beets.
- While beets are cooling, mix the shallot, lemon juice, salt, and pepper in a small bowl and add the oil, stirring constantly.
- When the beets are cool enough to handle, discard the skin and dice the beets.
- Add 2 1/2 tablespoons of the dressing to the bowl and mix to coat.
- Insert the diced goat cheese and pistachios.
Chef Tip:
If you want to add fruit to the salad, introduce mandarin orange wedges for a touch of sweetness.
