Beef Steaks with Mustard Sauce

Ingredients

4 beef steaks

½ tablespoon of butter
Sauce:

1 tablespoon of butter

½ onion chopped

3 chopped garlic

½ sprig of rosemary (leaves only)

1 teaspoon Worcestershire sauce

1 tablespoon mustard à l'Ancienne (with chickpeas)
Preparation Method
- Start by making the sauce: in a small saucepan, melt the butter with the oil and sauté the onion until translucent.
- Then add the chopped garlic and sauté a little more until the garlic starts to release an intense aroma.
- Add the capers, saffron, rosemary, and Worcestershire sauce. Saute for one minute.
- Add the wine and blend everything very well with a hand blender.
- Let it boil uncovered for about 10 minutes until the sauce has reduced by half and has a thicker texture.
- Add the two mustards and the cream and let it boil for 3 minutes over low heat. After this time, cover the pan to keep the sauce warm.
- While the sauce is finishing, season the steaks with salt and black pepper on both sides.
- In the skillet, heat the oil and add the butter to melt. Let the fat brown slightly and fry the steaks over high heat for just 15 seconds on each side, for medium-rare.
- Remove the steaks to a plate and let them rest for 5 minutes. To keep them warm, cover with aluminum foil.
- After resting, place the steaks on the cutting board and cut slices not too thin or too thick, making the cut at a 45º angle.
- Immediately transfer to a plate, with the domino effect slices, and drizzle with the hot sauce.
- Serve with fries and salad.
