Matcha is finely ground powder of specially grown and processed green tea leaves. It is special in two aspects of farming and processing: the green tea plants for Matcha are shade-grown for three to four weeks before harvest, and the stems and veins are removed during processing. Traditionally, the leaves are ground to a fine powder using two stone grindstones.
Matcha green tea powder is very special in Japan, it contains a high level of caffeine and as opposed to other teas, Matcha is whipped and not infused.
Its delicate notes and mild flavour are perfect with many desserts: home-made sorbet, financiers, macarons, tiramisu. You can also try it in soups, on shrimps or with a delicate fish served with a creamy sauce.

Preparation Suggestion:
Tips on how to make your tea: first sieve 2g of matcha tea into a bowl then pour on 7cl of hot water at 70°C. Whip the tea briskly for about thirty seconds with a bamboo chasen tea whisk in a W or M shape. Be careful not to scrape the bottom of the bowl when doing this. Once whipped your matcha tea will be deliciously frothy !
