The name of the Tortiglioni has a very specific origin: the “tortiglione” is a characteristic design worked on the lathe, with a spiral floor line, just like the line that characterises this shape. The Tortiglioni have an unmistakable elegance: all due to their shape, designed to collect the seasoning, which voluptuously insinuates itself between the spirals of the stripes.
It goes perfect with dense, full-bodied sauces, be they savoury meat ragus or refined cream and mushroom-based sauces. This cut of pasta is also perfect for pasta au gratin.
