Gum Arabic is a natural additive widely used in cooking. The oldest of the food gums is tasteless and odorless. It results from the flow of acacia sap. This is produced naturally or after an incision is made in the trunk and foot of trees of the genus Acacia sensu lato (Fabaceae family).
Gum arabic is an essential raw material for the food industry and serves primarily as an emulsifier, especially for citrus oils.
It is an essential ingredient for many desserts and sweets like marshmallows, Turkish delights or fruit jellies.
