In the West, the term curry often refers to the blend of Indian-inspired spices used to flavor dishes. However, in India, it is more of a catch-all word that refers to a sauce-based dish, inspired by the Tamil word “kari,” meaning “sauce dish.” To refer to the spice blend, Indians prefer the term “massala,” which means “mixture.” Each region of India, and even each family, has its own curry recipe. It can be mild like yellow curry, hot like paprika-based red curry, or fresh like green curry, which is made with lemongrass and coriander. Traditionally, these ingredients are found in a curry blend: turmeric, ginger, cumin, fenugreek, and coriander. In this blend, it’s impossible to forget the curry leaf, the Indian equivalent of the bay leaf. It comes from a tropical shrub, the Kaloupilé. Its leaves are often used in the composition of Indian curry. Curry is consumed in powder or paste form depending on preferences and recipes.
The history of Breton curry is linked to the colonial period and the importation of spices into Europe at that time. It was in Brittany, at the port of Lorient, that these goods arrived. Indian curry quickly mixed with the local cuisine, which was heavily focused on seafood. In the Breizh Curry recipe, you will find dried flavored seaweed such as nori, dulse, wakame, or even sea lettuce.
