According to legend, the origin of the bagel dates back to an act of gratitude towards a Polish monarch for his defense of the Jews against Turkish attacks. A baker, wishing to express his thanks, is said to have created a special bread in the shape of a stirrup (the word “bugel” meaning stirrup in German), symbolizing the king’s passion for horse riding.
