Sherry vinegar is a gourmet wine vinegar made from Sherry . It is produced in the Spanish province of Cadiz and within the triangular area between the city of Jerez de la Frontera and the towns of Sanlúcar de Barrameda and El Puerto de Santa María , known as the “sherry triangle”. By law sherry vinegar must undergo ageing in American oak for at least six months, can only be aged within the “sherry triangle” and must have a minimum of 7 degrees of acidity .
Imported directly from Spain, it is a high quality product that will transform a simple culinary preparation into a gourmet one.
Its use is very wide, as it accompanies both fish and white meats.
