With the Serra de Medro on the horizon, the Alentejo olive groves offer us year after year with olives of unparalleled quality. The Alentejo olive trees and their fruit are the center of attention. The fruit of the work throughout each year culminates in the harvest, where the best olives are selected in their optimal state of maturation. Only months later, after a natural curing process, the first preserved olives begin to taste, just like the ones inside this bottle. Nothing else enters this natural cure, apart from time, water, salt, oregano and bay leaf.
The Cobrançosa olive is very resistant to cold but, like a good Alentejo, it also has some susceptibility to heat. Its oil causes sensations of bitterness and pungency of medium intensity, which increase when harvested in green.
Cultivar originating in Trás-os-Montes, widely spread and well adapted to the soils and climate of the Alentejo region, it is a tree of medium vigor, medium arborescence and open size, very productive and regular.
