Codfish Empanada

Ingredients

2 shredded cod fillets

1 onion

2 garlic cloves

2 tablespoons of tomato pulp

1 tablespoon of butter

Preparation Method
- Peel the onion and garlic cloves, slice the onion and mince the garlic cloves.
- In a wide pan, heat the butter, the other tablespoon of oil and sauté the garlic and onion until they are browned.
- Add the tomato pulp and the cod and let it stew a little, drizzle with the wine and let it cook until it almost runs out of broth. Adjust seasonings, remove and sprinkle with coriander. Let cool.
- Place a sheet of parchment paper on a large tray and grease it with oil. Divide the dough into two equal parts and roll out onto 2 equal disks.
- Place the filling in the middle of the dough and close the dough, in the shape of a half moon.
- Brush the top with olive oil and bake in a preheated oven at 180ºC for 40 minutes. Remove and serve to taste.
